The Maling family bought this Palmers Lane vineyard in 1989, inheriting vines planted in 1971, and built the cellar door around a specialty few others in the Hunter attempt: ageing the wine themselves and selling it only once it's ready to drink. Shiraz, semillon, chardonnay and cabernet sauvignon from the estate's 40 acres are held back for a decade or more before release, so the tasting bench routinely pours vintages far older than the current one. It's a real point of difference in a valley where most cellar doors sell wine within a year or two of vintage. The room itself is unfussy — air-conditioned, set up for tastings and small functions, with parking at the door. Open seven days, 10am to 5pm. Worth building into a Palmers Lane loop for travellers who want to taste what Hunter semillon and shiraz become with real age, rather than just how they start out.
